Roma Baccalà 2021

Ostissimi, the Association of the Roman Hosts promoters of the Capitoline culinary tradition, returns to animate the historic and lively Garbatella district with the second edition of Roma Baccalà, four days dedicated to cod and its irresistible connections with food, religion, history, myths, and randomness.

The rich and varied calendar of the event includes meetings, tastings, workshops, and reflections on this delicious fish specialty.

Thursday 9 September from 10 to 18, the awarding of the First Prize of Culinary Art Acir Gran Roma Baccalá awaits you: 15 chefs from all over Italy, representing 12 associations of cooks and three amateur cooks, compete live, to create the best dish of cod or stockfish in Italy. At 19.30, instead, the Talk Show Baccalà between present and future awaits you.

Among the novelties of the new edition, the Baccalà Folks presents three events that celebrate the baccalà festivals, a folkloristic aspect typical of many Italian villages.

Don't miss the new Artimangiando space: La Cittá degli Artigiani del Gusto, the educational meetings which, from Friday to Sunday from 6.00 pm to 10.00 pm, take place in the area of ​​the Rome Baccalà Market.

Saturday 11 September at 8.30 pm, a dinner organized by the Embassy of Norway, the land of stockfish and cod, takes place.

Another indissoluble culinary union is at the center of the events organized by ARSIAL entitled: Potatoes and cod, the story of an endless love, which involves the Alliance between Chefs and Slow Food Lazio Presidia.

From Friday to Sunday, a host from Tuscia, a host from the area of Rieti, and a host from Ciociaria alternate in the laboratories of Piazza Sauli to give life to a cooking show dedicated to the traditional cuisine of cod in Lazio and the biodiversity of the Lazio potato.
